In Portland, Ore., chef David Machado, who owns the Mediterranean-style Lauro Kitchen, says everything from the popularity of yoga and vegetarianism to diners' love of exotic spicing convinced him that "the Indian thing is really big." His new Vindalho will be oriented to younger diners and play "Asian Underground" music, mixed by DJs.
